Ingredients
2 cups fresh broccoli florets
1 small onion, thinly sliced
1 tablespoon butter
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1 cup milk
1/2 cup water
3/4 teaspoon minced fresh basil or 1/4 teaspoon dried basil
1/4 teaspoon pepper
1/3 cup shredded cheddar cheese
Directions
In a large saucepan, saute broccoli and onion in butter until tender. Stir in soup, milk, water, basil and pepper; heat through. Add cheese; stir until melted. Yield: 4 servings.

Broccoli Chicken Casserole
Perfect for pre-cooked rotisserie chicken, it’s a tasty way to turn leftover chicken into a second meal too.
10-3/4 oz. can cream of mushroom soup
1-1/2 c. milk
16-oz. pkg. chicken-flavored stuffing mix
3 c. cooked chicken, cubed
10-oz. pkg. frozen chopped broccoli, thawed
1 onion, finely chopped
2 stalks celery, finely chopped
Optional: 1/2 c. shredded mozzarella cheese
Whisk soup and milk together in a large bowl. Stir in remaining ingredients except cheese; mix well. Transfer to a 3-quart casserole dish that has been sprayed with non-stick vegetable spray. Bake, uncovered, at 350 degrees for 35 to 40 minutes. If desired, sprinkle with cheese during the last 10 minutes of baking time. Serves 4 to 6.

Herb Seasoned Broccoli and Tomatoes
One of my daughters has become a vegetarian so I've been looking for recipes for her, she's 15. I'll be sharing here.
1 pound fresh broccoli, cut into bite size pieces
2 Tablespoons olive oil
1/4 teaspoon dried basil leaves
1/4 teaspoon dried oregano leaves
1/2 teaspoon salt
1 clove garlic, finely chopped
2 plum tomatoes, seeded, chopped
Heat 1 inch water to boiling in a skillet. Add broccoli, heat to boiling. Boil 5 to 7 minutes or until crisp-tender; drain and set aside. In skillet, heat oil over medium heat. Stir in remaining ingredients. Cook for 1 to 2 minutes, stirring frequently, until hot. Remove skillet from heat, add broccoli and toss gently to coat.

Chicken & Broccoli Casserole
A delicious and easy to make dish with broccoli, chicken and a cheese topping.
Ingredients
4 large chicken breasts
1 large bag of broccoli
Curry powder
Sour cream
2 cans of cream of mushroom soup ( I prefer cream of chicken, celery or even asparagus)
16 ounces shredded sharp cheese
Directions
Wash chicken breasts and boil until tender.
Cut chicken into bite size pieces and line the bottom of a 13x9 baking dish.
Boil broccoli until tender, drain and put on top of the chicken.
Mix sour cream, cream of mushroom soup and curry powder together and spread over
chicken and broccoli.
Lay shredded sharp cheese on top and bake until cheese starts to melt. Enjoy!
