Corn Salad Was a Hit

So I made the Corn Salad that I had posted previously, it was a hit dish at our Easter table and tasted even better the next day once all the flavors had the chance to marry together over night.  Thanks to for this awesome recipe!

Corn Salad

Vanilla and Blueberry Polenta

1 cup stone ground cornmeal
4 cups unsweetened vanilla Almond Breeze Non Dairy beverage ( I use Vanilla Silk Soy Milk)
1/2 tsp pure vanilla extract
1 cup fresh blueberries (I use frozen as I always keep frozen fruit on hand)

In 2 qt saucepan, heat the cornmeal over med heat, stirring constantly, for about 3 min or until lightly toasted.  Remove from the heat and carefully pour in the Almond Breeze (or Vanilla Silk). Return to the heat and bring to a simmer.  Reduce the heat to low and simmer, stirring regularly, for about 10 minutes or until the cereal is thickened and creamy. Remove from the heat and allow to stand for 5 minutes.  Stir in the vanilla and berries.
Serve immediately.
