8 Can Super Easy Crockpot Soup


1 pound Ground Chuck

1 can whole Kernel Corn
1 can Rotel Tomatoes
1 can diced Tomatoes
1 can Veg-All
1 can Vegetable Soup
1 can Tomato Soup
1 can Hot Chili Beans
1 can Green Beans



Brown and drain ground Chuck, In a Crockpot, mix beef with all 8 cans (do not drain vegetables) Simmer about 3 hours or over night in Crockpot. 
Note: Add chili powder, salt, pepper and Worceshershire Sauce to taste. This recipe make a crockpot full and is wonderful left overs.





 


Corn Salad Was a Hit

So I made the Corn Salad that I had posted previously, it was a hit dish at our Easter table and tasted even better the next day once all the flavors had the chance to marry together over night.  Thanks to 400caloriesorless.com for this awesome recipe!

140 calories per serving

Dressing:
¼ c oil
1 T chopped parsley
3 T rice vinegar
1 T soy sauce
½ t crushed red pepper
Salad:
1 lb. frozen corn
¼ c shredded carrots
¼ c sliced radishes
¼ c sliced green onions (green part only)
Combine all dressing ingredients and refrigerate. Bring a pan of water to a boil and cook corn 2 minutes. Drain and rinse with cold water to cool then pat dry and add to all the rest of the ingredients. Cover and refrigerate 2 hours so flavors mix.

Corn Salad

Vanilla and Blueberry Polenta

Ingredients:
1 cup stone ground cornmeal
4 cups unsweetened vanilla Almond Breeze Non Dairy beverage ( I use Vanilla Silk Soy Milk)
1/2 tsp pure vanilla extract
1 cup fresh blueberries (I use frozen as I always keep frozen fruit on hand)

Directions:
In 2 qt saucepan, heat the cornmeal over med heat, stirring constantly, for about 3 min or until lightly toasted.  Remove from the heat and carefully pour in the Almond Breeze (or Vanilla Silk). Return to the heat and bring to a simmer.  Reduce the heat to low and simmer, stirring regularly, for about 10 minutes or until the cereal is thickened and creamy. Remove from the heat and allow to stand for 5 minutes.  Stir in the vanilla and berries. 
Serve immediately.
